SEO stand for Search Engine Optimization, which is a fancy term meaning that you are tuning your HTML to look good in the eyes of the search engine spiders, in the hopes of getting a good (i.e. top) placement in the search results for a given set of search terms.
There are two types of SEO, on-page, and off-page. On page optimization means tuning items such as your <title> tag, your <heading> tags, using bold around keywords, and in the case of Google, using semantic terms related to your keywords (think parachuting if you have a skydiving site).
Off-page optimization has more to do with getting links into your site, who they are from (are the sites considered authority), and what is in the anchor text, i.e. what is the text in the link to your site.
